This D.O. embraces the best quality sparkling wines produced
in Spain, following the traditional
method of second fermentation in bottle or Method Champenoise.
Although more than 90%
of the production of D.O.Cava takes place in Penedes, a D.O.
in itself, astride between the
provinces of Barcelona, Tarragona and Lerida, all three situated
within Catalonia, D.O.Cava is also produced in a minor scale
in the areas of Rioja, Navarra, Valencia and Extremadura.
The first Cava was produced in Spain in 1872 and since then
it has gained fame throughout the world. Cava is today as
much a classic as Champagne and of comparable quality.
